Mark you need an Indian/Pakistani type store that sells all the really cool little packets of crap you need.
Does your hick town run to one a those?
You can make the spice base yourself but it's a mugs game as the little packets cost f.a.. My girlfriend is an Inian nut and I get the whole 9 yards regularly. Gotta have Roti, Chapati etc with it. And all the chutneys, man, we have at least 5 different chutneys in the larder any time you look. She makes a great dhal too.
There are sll types of people around,towns aren't too big.
Jamaican,Indian,Persian & many types of Asian markets.
Nothing here is from scratch.
Too many spices,too complicated.

Pataks,they sell it in my local hick grocery store ;)
